Concept

The culinary philosophy of Chef Inaba lies in upholding tradition while embracing the belief that "tradition is a continuous process of innovation." Through constant trial and error, Chef Inaba interprets classic techniques in his own unique way, further developing and refining them.
He always keeps in mind to provide the best hospitality by using seasonal ingredients and tableware that harmonize with the cuisine, timing of serving, and paying attention to all aspects of time and space related to the cuisine, such as the temperature of the day and the guest's hunger.

We are dedicated to selecting ingredients that embody the essence of Japan's four distinct seasons.
We propose cuisine that maximizes the inherent flavors of these ingredients, presented on harmonious tableware to gently engage and delight the five senses of every guest.
This experience is woven by the serene and unconstrained artistry of chefs Masanobu Inaba and Ryuichi Kaneko. Working under the spirit of "Onko Chishin"—revisiting the past to understand the new—they honor tradition while continuously innovating to suit the contemporary palate. Breakfast

Starting with a carefully crafted, refreshing juice and freshly made tofu dishes, our chef prepares dashimaki tamago (Japanese rolled omelette) right before your eyes, and we serve carefully selected fish and meat grilled over charcoal.
We use seasonal ingredients generously so that our guests can experience the changing seasons through our dishes.
The steam rising from the okudosan stove, the aroma of freshly cooked rice, and the sound of charcoal crackling... it's a scene that feels nostalgic yet somehow fresh.
